Lee Murdoch has been appointed executive chef at Seaton House in St Andrews. He succeeds Mark Drummond, who served as the culinary director since December last year.
Murdoch will collaborate with Roy Brett, the founding chef behind the Ondine Oyster & Grill restaurant. Brett also serves as the head of culinary for the UK and Europe at Valor Hospitality, the group managing the 42-bedroom Seaton House.
Prior to this role, Murdoch played a key part in launching the 140-cover Coal Shed steakhouse in Brighton in October 2024. Throughout his career, he has held senior positions in kitchens and hotels across the UK, Asia, and the Middle East, including at Trump Turnberry in Scotland.
He also holds a Royal Academy of Culinary Arts Award for Excellence.
As executive chef, Murdoch will oversee the hotel’s food and beverage operations, which include the Board Room, Bow Butts Bar, and Ondine Oyster & Grill.
