Stein revealed the key factor behind this expansion was the takeover of his two Bannisters hotels and restaurants by investment management group Salter Brothers in October last year.
“The truth of it is that the two Bannisters hotels and my restaurants were taken over by [investment management group] Salter Brothers in October last year,” Stein said. “That was a bit of a surprise. But starting to work with them, I realised how professional they were and how much I liked working with them.”
After years of building his presence, Stein's continued investment in the Australian dining scene shows his strong bond with the country and its food culture.
